Matches were suspended for two days after the incident, which is being investigated. The remaining games will be moved from Caracas to the central Venezuelan city of Maracay.
Team manager Felix Yip Wai-kwong said the stray nine- millimeter bullet may have come from a gunfight in a slum area.
"The Venezuelan vice-president visited Cheuk in hospital and the president [Hugo Chavez] called to apologize," said Yip, who attacked the lack of safety measures.
"How could they guarantee our safety if they didn't submit a written report, as promised, explaining the cause of the incident?"
From the airport, Cheuk was taken to St Teresa's Hospital in Kowloon. Before returning home, she underwent surgery in a Caracas hospital, where she stayed for two days.
